Dallas Dreams of Chilled Grapefruit Meringue Pie

Image
Again I tried to do something more unique, and I don't think this one turned out super great.  I mean, it was okay. It was sweet and creamy, but it just didn't live up to the vision inside my head. The meringue on top did not work.  I guess I don't know how to make them since my lemon meringue pie was also a flop.  It was just a gooey mess stuck to the top.   And then there wasn't a very strong grapefruit flavor. This was definitely my own fault because I couldn't get any grapefruits to zest (meaning there were no quality grapefruits at the store), so I used oranges instead.  I did use grapefruit juice in the curd in the middle, but it was still not very strong. I also don't think I used the right type of caramel in the middle cream portion.  Finally, I think I left them in the oven a second too long. You can see they are a little more black than I would like.  In addition to the pie not working the way I thought, it was also the most difficu...

Dallas Dream of PIE DAY 2021

Image
It is finally here, one of my favorite holidays.  Of course I am required to love pi day because I am a mathematician, but I am also a pie-maker, this day was make for people like.   I wasn't going to go crazy with pies this year, but Amy pushed me into it.  I was only going to make 2 pies, but Amy figured we should probably make one for everyone in the family.  We ended up baking 6 pies, (and some friends brought over a 7th pie).  That is a lot of pies for a small family, we ended up sharing most of them.  Here is what we made:  -Apple Pie (American Favorite) -Coconut Cream Pie (One of Amy's favorites I made earlier this year) -Milk bar Pie (this is a New one we have never made before) -Nantucket Cranberry Pie (One of my favorite I made previously) -Strawberry Pie (was suppose to be strawberry-rhubarb, we we couldn't find any rhubard) -Cookie Pie (Amy actually made this one, she loves cookies) -Key Lime Pie (brought to us by our friends) Th...

Dallas Dreams of Shoo-Fly Pie

Image
I have started to reach a little for more unique pies.  This one was suggested by on old friend from Rochester, thought I should give it a chance.  This was not my favorite pie, but I'm not a HUGE fan of molasses.  This pie was essentially a pie crust with molasses inside, with a crumble topping.  I had a slice, but I could eat a lot of it.  Anyway, it was a good experiment!

Dallas Dream of Cherry Pie!

Image
Happy Valentines Day! This week I needed a pie that was more or less red in the middle for Valentines. I have never made a cherry pie because cherries are not in season yet, but I decided this was the week for cherry. I had to buy frozen cherries from Wegmans.  The pie turned out ok, I was hoping my hearts on top would look nicer, but I guess I'm not much of an artist.   This pie was tasty, the crust turned out nice.  I think I would have been better had I used tart cherries like most recipes suggest, but I only had  sweet dark ones frozen.  It was still pretty good though.

Book Review: The Name of the Wind

Image
I finished reading "The Name of the Wind" by Patrick Rothfuss. This is not typically the type of book I enjoy reading, and I kind of started reading it on a whim, without really knowing a lot of about it and it turned out that I really enjoying the read.  It is a fantasy book, set in a fantasy place, but I felt like it like it wan't TOO fantasy-esque.  Like there is magic, but they don't call it magic, and they treat it more like a science.  The  main character goes to college to learn about it.  But in addition to learning about magical things, they also take classes like logic, and medicine, among other stuff.  I don't know exactly what it is I liked about this hero adventure, perhaps it was the main character, or the world it is set in. I read it pretty quick because I was interested in what was happening. Unfortunately it is a series and the story stops very suddenly at the end.  I will probably even read the next one at some point.  In ...

Dallas Dreams of Chess Pie

Image
This week I made something called chess pie, I'm not sure why it is called that. It has kind of a gritty custard middle, but we at it with a berry sauce.  It mostly tasted like berries.  It was ok, not my very favorite pie, but not bad.  But it is always fun to try something new! I think the best part of this pie was actually the crust.  The recipe called for added sweetened shredded coconut to the crust, this was a good idea.

Christmas!

Image
Well this post is a long time coming.  I just want to write a little about our Christmas this year because I think we will want to remember how we celebrated christmas during the pandemic.   This Christmas we didn't go anywhere or see any one, it was just our family in our house.  The previous weeks we made an effort to make goodies and and carol for our neighbors, but we were pretty secluded on christmas itself.  Santa brought the kids too many treats and an Elsa castle to go with all their other princess castles.   This was the christmas of Building.  We got so many building things:  Duplos, linkin' logs, bristle blocks, magnetic building blocks (two varieties), mega blocks, etc, etc.  We want our girls to become engineers and architects, and we just were not getting there with all these princess toys, so now they can focus and building things. (We also got lego for emma's birthday !).  Instead of wrapping up all of these blo...
