Dallas Dreams of Chilled Grapefruit Meringue Pie

Again I tried to do something more unique, and I don't think this one turned out super great.  I mean, it was okay. It was sweet and creamy, but it just didn't live up to the vision inside my head. The meringue on top did not work.  I guess I don't know how to make them since my lemon meringue pie was also a flop.  It was just a gooey mess stuck to the top.  

And then there wasn't a very strong grapefruit flavor. This was definitely my own fault because I couldn't get any grapefruits to zest (meaning there were no quality grapefruits at the store), so I used oranges instead.  I did use grapefruit juice in the curd in the middle, but it was still not very strong. I also don't think I used the right type of caramel in the middle cream portion.  Finally, I think I left them in the oven a second too long. You can see they are a little more black than I would like. 

In addition to the pie not working the way I thought, it was also the most difficult, most time-intensive pie I have ever made.  There were hours of waiting between every step. It took ALL DAY.

  1. Is it just me or do grapefruit and caramel not go together....? Maybe that was your problem lol
